Thursday in the Kitchen: Shortbread Cookies with a Twist

It’s Thursday, so it’s time to kick off the weekend with another favorite recipe of mine. It’s pretty much a scientific fact that you cannot go wrong with a recipe by the beloved and charming Dorie Greenspan. This delightful sprite splits her time between Paris and New York, busily baking her way into our hearts. I am well aware of her otherworldly gift for innovating and baking up the very best, so when I came upon this lovely post by Alexandra’s Kitchen, featuring one of Dorie’s recipes, I knew this cookie was a real winner. With beautiful photos, Alexandra Stafford walks us through the steps of this simple but sublime shortbread cookie. I took it just one step further by adding minced rosemary and orange zest to the sugar before rolling the dough in it. You could also use lemon zest in both the dough and the outer layer of sugar… so many possibilities! These cookies keep beautifully and make wonderful gifts.
